Aim doesn't operate in the same way as say Yahoo or MSN when it comes to multi-person chatting.
Instead of trying to invite people to a conversation, you must open a Chat instead. If you have Aim 6, click on Actions at the bottom of your Buddy List. From Actions select Chat and then Buddy Chat.
From there you can invite whomever you'd like.
